Sweet & Tangy Cherry Bars

When I was growing up my mom would host Tupperware parties for one of her friends who was a consultant... the only thing I remember from these was this amazing dump cake as she called it.  It was simple five ingredients...  butter, cake mix, cherry pie filling, crushed pineapples, and vanilla    buttercream.  And the instruction was simply take a baking dish,  pour in the pineapple... then the cherries... the cake mix over top and grate the stick of butter over the cake mix... stick it in the oven and viola!!!  It's the amazingly ooey gooey goodness in a pan.  I was thinking about my mom a lot last week, so I decided to attempt making these but into bars rather than a cobbler.  These were so simple, I hardly need to give you instructions.  

Mix together a stick of butter and lemon cake mix... set aside a cup of mixture for crumb topping

Spread mixture onto a cookie sheet and bake for 10 minutes at 350 degrees 

Remove from the oven,  drain pineapple very well and spread evenly over crust

Spread pie filling over pineapple and sprinkle remaining dry mixture over the filling, and return to the oven for 20 minutes.  Let cool completely, and drizzle with a vanilla buttercream...  

These bars are best when they are served the next day... the little bit of pineapple juice really melds with the crust and was just a great sweet & tangy reminder of my childhood.
