Spicy Thai Basil Stir Fry from Plated

I'm sure you've seen all the various subscription boxes out these days... I've had the opportunity to work with a couple various ones of some recipe development projects.  So when Plated offered to send me some ingredients to try I was open and excited to check them out.  Over the next couple of weeks, I'm going to be highlighting some recipes. But today we're talking all about asian cuisine.

Salted Caramel Hazelnut filled Peanut Butter Cookies

Ummm... I'm not really sure what to say about what you're about to see other then these are pure decadence. I mean really what is better than... peanut butter... salted caramel... and Nutella!?!  Not much... I tell ya... NOT MUCH!!!

Sweet & Tangy Cherry Bars

When I was growing up my mom would host Tupperware parties for one of her friends who was a consultant... the only thing I remember from these was this amazing dump cake as she called it.  It was simple five ingredients...  butter, cake mix, cherry pie filling, crushed pineapples, and vanilla    buttercream.  And the instruction was simply take a baking dish,  pour in the pineapple... then the cherries... the cake mix over top and grate the stick of butter over the cake mix... stick it in the oven and viola!!!  It's the amazingly ooey gooey goodness in a pan.  I was thinking about my mom a lot last week, so I decided to attempt making these but into bars rather than a cobbler.  These were so simple, I hardly need to give you instructions.

Things I love...

The things I love don't usually have a rhyme or reason, just a mix match or all my current favorites but this month there seems to be a theme in color... and while not intentional, it seems various shades of purples is also among the things I love...

Chipotle Chicken Fajitas Soup

I adore Chicken Tortilla Soup,  they used to have the most amazing Chicken Tortilla soup at my work and of course like all good things it came to an end.  I miss it.   I especially love a big bowl of extra spicy soup with some big, fat chili cheese scoops,  you know the kind from Fritos that get your fingers all gooey.  They are so good.  Anyway,  there weather here has been a bit temperamental... some like to call it Fall, and so I thought if I'm going to bundling up, I might as well make a big pot of warm yummy soup to blend in with the theme.  Here is what I came up with...

Peach Pie Biscuits

Last month, Joy The Baker posted a fun little baking bootcamp over on her blog for Apple Pie Biscuits. I'm not a huge fan of apple pie, meaning... I really don't care for it at all.  So I decided to mix up my entry a little and make it a little more "me" and simplified it as well as incorporating my unbridled passion for well... anything peach... I figured "Peach Pie Biscuits" would be the perfect tweak.

Kitchen Sink Makeover on a Rental Space

When I initially met with my landlord, about renting my space, she told me that if I wanted to pay an extra $80 a month, I could opt for an upgrade of all new appliances, sink, windows, and hardware.  The impulses in me said oh wow, sure,  I mean who doesn't love new... but the practical in me ( which is owned by a voice that is not in MY body said... that's almost an extra $1000 a year. )  As you can see the practical won, and I am loving getting creative with my space.  This entire little project budgeted at a whopping...  $12.00.

Roasted Italian Pasta Salad

Since fall is now technically here, the transition  away from summer produce is kind of a bummer. I love tomatoes, cucumbers and onions fresh from the farmers markets.  A few weeks ago, my dad came to visit and when he stopped in he brought me tomatoes from his garden.  I had some beans in my cabinet that I'd been wanting to use but really wasn't quite sure how... so thanks to Pinterest and a recipe I found here.  A few of my own additional touches, and viola!!! I ended up with a pasta salad that was out of this world.

Lemon Blueberry Protein Pancakes (Gluten Free)

Over the last year,  I've developed a love for pancakes & waffles.  I love 'em with all kinds of mix-in and flavors.  I've tried,  pumpkin pie, chocolate chip, red velvet... but of all the varieties this is by far my all time favorite!!!  They are so light & fluffy, and the lemon squeezed over top mixed with the honey. Perfection.
